Creamy Italian Sausage & Veggie Soup

Hearty, delicious and bursting with goodness.

Ingredients:

  • 1 tbsp Extra Virgin Olive Oil
  • 500g Italian Sausage, (mild or hot depending on your preferences), casings removed
  • 1/4 cup Salted Butter
  • 1 Yellow Onion, finely diced
  • 2 ribs Celery, diced
  • 3 Carrots, peeled and diced
  • 3 Garlic Cloves, minced
  • 5 Red Potatoes, peeled and large diced
  • 6 cups Chicken Broth
  • 1 bunch Kale, chopped
  • 2 cups Heavy Whipping Cream
  • Salt & Pepper to taste
  • Shredded Parmesan Cheese to garnish

Direction:

  1. In a large pot, over medium-high heat, heat up olive oil and sauté Italian sausage until brown, breaking up sausage as it cooks. Using a spoon, transfer sausage to a plate and set aside. Drain grease.
  2. Add butter to pot, and sauté onions, carrots, and celery until softened and translucent.
  3. Add garlic and sauté for another minute.
  4. Pour in chicken broth and potatoes and allow to simmer over medium heat until potatoes are fork-tender (10 minutes or so).
  5. Pour in heavy cream, kale, and browned sausage and stir. Add salt and pepper to taste.
  6. Serve and garnish bowls with parmesan cheese.
