Roasted Butternut Squash Quinoa Salad

This Roasted Butternut Squash Quinoa Salad combines roasted squash, cooked quinoa, cinnamon and maple syrup creating a flavourful fall-inspired salad.

Prep Time: 10 mins Cook Time: 35 mins Serves: 7

Ingredients:

1 butternut squash, peeled and cut into cubes

1 tbsp olive oil

1/2 tbsp maple syrup

1 tsp cinnamon

1 tsp salt

1 1/2 cups dry quinoa (cooked in vegetable broth)

1 cup kale, chopped

1/4 cup olive oil

2 tbsp maple syrup

1 tbsp apple cider vinegar

1 tbsp dijon mustard

1 garlic clove, minced

1 tsp salt Pinch of black pepper

Dried cranberries

Pumpkin seeds

Feta cheese

Thyme

Directions

  1. Preheat the oven to 400 degrees F.⁠⁠
  2. Cook quinoa according to the package in vegetable broth (instead of water). Set aside and let cool.⁠⁠
  3. Toss butternut squash, olive oil, maple syrup, cinnamon and salt in a bowl. Arrange butternut squash in an even layer on a baking sheet. Roast in the oven for 35 minutes.⁠⁠
  4. Whisk dressing ingredients together in a small bowl.⁠⁠
  5. Toss cooled quinoa, kale and dressing together. Taste and add more salt/pepper if desired.⁠⁠
  6. Top salad with roasted butternut squash and additional toppings.⁠⁠
