Ham & Cheese Egg Bite Breakfast Boxes

These breakfast boxes are great for anyone on the go!

Ingredients:

Ham & Cheese Egg Bites

10 Western Family Free Range Brown Eggs

1 cup Western Family Triple Cheddar shredded cheese

1 cup Western Family Sliced Cooked Ham, diced

1 cup Western Family frozen chopped spinach

Salt + Pepper to taste

Breakfast Boxes

4 Tablespoons Western Family Almond Butter

4 Western Family English Muffins, sliced in half

4 cups fresh berries of choice

4 Kiwi fruit

Directions:

Ham + Cheese Egg Bites

1. Preheat the oven to 350F

2. Spray the silicone muffin pan liberally with oil.

3. In a medium bowl, whisk the 10 eggs, season with salt and pepper, and set aside.

4. To each well of the silicone muffin pan, add the shredded cheese, ham, and frozen spinach (does not need to thaw).

5. Pour in the whisked eggs to each well until ½ to ¾ full. It is easier to transfer the whisked eggs to a wet measuring cup with a spout to pour the egg mixture into each well.

6. Bake for 10-25 minutes until the eggs are cooked throughout.

7. Assemble breakfast boxes with one English muffin sliced in half, 1 tablespoon of almond butter, 1 cup berries of choice, 1 kiwi, and 2 egg bites.

8. Freeze remaining egg bites for the future: Once the eggs are cooled fully, warp each in plastic wrap and store them in a freezer-safe bag. When ready to use, remove plastic wrap and thaw the egg bite in the fridge, or fully cook the egg bite in the microwave wrapped in a paper towel to absorb the excess moisture. Reheat in one-minute increments until warm thoroughly.

Tips and Tricks:

o A silicone muffin tin ensures the egg bites do not stick to the pan. If you don’t have a silicone pan, you could pour your egg bite mixture into silicone muffin tin liners.
