Easter No-Bake Mini Egg Cheesecakes

Rich and creamy and the best part is you don’t have to bake it!

Prep Time: 30 mins Servings: 14

Ingredients:

Crust:

1 1/2 cups Western Family graham cracker crumbs

1 Tbsp Sugar

1/2 cup Western Family Salted Butter, melted

No-Bake Cheesecake:

1 cup Heavy Whipping Cream

2 8oz packages Western Family Cream Cheese, room temp

2/3 cup Sugar

2 Tbsp Sour Cream

Whipped Topping:

1 cup Heavy Whipping Cream

1/4 cup Powdered Sugar

1 tsp Western Family Pure Vanilla Extract

Additional Toppings:

Mini Egg Chocolates, crushed

Micro Mini Egg Chocolates

Lindt Mini Chocolate Bunnies

Instructions:

1. Line muffin tins with paper liners, 14 in total.

2. In a medium bowl, combine graham crumbs, sugar, and melted butter until evenly combined. Divide the crumbs between the paper liners (about 2 Tbsp each), and then press down firmly to form crusts. Place in refrigerator to help firm up.

3. In a medium bowl, beat heavy whipping cream with an electric mixer on high speed until stiff peaks form. Set aside.

4. In a large bowl, mix cream cheese and sugar with electric mixer on medium/high speed until fluffy and smooth (around 3 minutes). Add in sour cream and mix another minute until combined.

5. With a spatula, gently fold the whipped cream mixture into the cream cheese mixture until combined. Divide the mixture into 4 bowls. Do a drop or 2 of food coloring into each bowl (pink, blue, green, and yellow) and gently mix until color is even. Divide the mixtures between the 14 crusts, layering colors into each paper liner. Smooth out the tops with a spatula. Place in refrigerator and allow to set for a minimum of 6 hours or overnight. (Cover with plastic wrap after a few hours).

6. Once set, make the whipped topping by adding whipping cream, powered sugar, and vanilla extract into a medium size bowl and beat with an electric mixer starting on low and increasing to high speed as it begins to firm up. Beat until stiff peaks form. Transfer whipped cream to piping bag with a Wilton 1M piping tip on the end.

7. Remove paper liners from cheesecakes while they’re still cold. Pipe whipped cream onto each cheesecake and with Micro Mini Eggs, crushed Mini Eggs, and/or Lindt Mini Chocolate Bunnies. Enjoy!
